when two moves hit at the same time, the move that does more damage always win, a 2P only does 9 damage, so yes, knees, and mid kicks will stuff 2P's if they collide on the same frame.
This is how you stuff wake up attacks too. using a stronger move that beats out the rising kicks.
Throws are sometimes harder to land because unlike in SC, throws in VF cannot beat strikes start up frames, unless it's a catch throw. Even if you are +8-9 and go for a 10 frame, any attack will beat it.
I never accept anything lower than a 3 bar, sometimes 2 if I have been rejecting matches for a while.

The only time SW A+B+K G ever worked with me was when i did it by accident, landed with my back to the ring edge and then threw the guy over with 6B BE for the win.
