The training mode tutorial from the quick step series doesn't help cus it uses the SCIV mode. I specifically need to know how to train against characters, like how can i run through their moveset and learn their moves and which way i can sidestep, etc. Do you have to manually record the move on 2P is there an easier way?

Fahros made a 40 minute video about the training mode. I hope that it can give you some ideas how to implement its different options in your training. Basically, you can set the cpu to do your opponent's "main" moves against you but mostly you have to use the record-function. You can find the video here:

Yes you have to go in record mode.
When you're in the move list, you can see the second character's move list by pressing the right trigger (R2 on PS3). When you want to practice punishing something, just record it and hold Guard until the attack animation ends and a second after that, this way you can play it back and see how easy it is to punish.
