Soul Calibur 2: Siegfried, to some extent.
Soul Calibur 3: Siegfried's input ending.
Soul Calibur 4: Kind of a mix between Siegfried's and Hilde's. Soul Edge is destroyed and Siegfried is allowed to live.
Soul Calibur 5: The story mode sums it up really.

I'm not sure what you are actually asking.
Are you asking which character's story modes were canon?

Well yeah.

Well, I can't say. Only canon story mode is SC5. Everyone elses were non-canon, or semi canon, meaning elements in their story modes reveal to be true in the next game. Most of Soul Blade's Edge Master endings, for example, ended up being partially canon.
