Try this: when fishing for a CH 4A:B attack throw combo, and 4A is blocked - immediately hit B+K. I find this will stuff most punishment options due to the nature of the state that the guarding opponent is left in afterwards. They can easily block it, I guess..but it's safe and it pushes back on hit and guard.

I haven't tested it significantly, but it's just a thought
 
I've been playing a lot of Zas recently. It is hard to say exactly what you should and shouldn't do in a particular situation as I more react than think as of right now. It is like, trail and error. You fight, you start using moves, you realize that for some of them, if you do it, you will be eating something else in return. Eventually, you stop using the move. For example, I use to use :3::A: :B: a lot because it was a mid. Then you realize that it has a rediculous lag time, and now I rarely use it. Here and there I'll use it for mix up but not that often. I had to learn the hard way to NOT use :1::A: :B: when your close. The execution time is just to long. Using it from far is fine, using it when your opponent is lying there on the ground is fine. Hell delaying that B works wonders I've seen.

:6::6::B:+:K: should be used in combos and not out of combos. f,f A+B also is good within combos, but good when they miss a move from afar, and the occasional mixup/pressure game. It has a long lag time, so you can't spam it. As with all characters, the mixup game between the few good lows you have, the good mids you have, throw, and a descent combo starter is pretty much the rule of the game. With slow guys like Zas, it just means A A an B B and down Kick is that much more useful. And Don't expect much from his Unblockable. I don't know about anyone else here, but if a character has a descent unblockable, I sure as hell use it from time to time.

Overall, Zas is solidly a mid level character.
