Technically, according to the AC storyline, Altair is more of the weapons master as the Assassins were a collection of warriors who trained for fighting since birth, they even had their own central base. After the first AC, Altair moved the Assassins to a more in the shadows background, like the assassins we know of today. Ezio follows those footsteps, even though in the gameplay you can wage a one man war against the entire city if you felt like it.
Frankly, Altair would make a better fit than Ezio, following the logic of the story. Saying the logic was followed that is.
