I would have to say as far as Moveset's the best game is SC2
As far as story mode wise , Id have to say SC3

I've played soul calibur 2 before but it was so long ago and I don't recall much about the game. I remember using spawn and from what I can remember the game wasn't bad.
Soul calibur 3 has to be the best though. I mean it had so many games modes on their it never got boring. Also I was almost unbeatable with yunsung. The game was just pure fun and hands down the best.
Sc4 was decent but not better than 3. Number 5 is just horrible!

SC4 looked best, SC3 had the best side mode and largest fighting style library, SC5 plays faster which is niceish.

I'm just glad they changed the SC4 art-style to what SC5 has. To me, SC4 looked like WoW had invaded a fighting game.
