It sounds to me like what you are looking for is a single player game. There are many fighting game franchises that are conceived with single player experience in mind instead of the multi-player; but Soul Calibur isn't one of them. It has it's roots and it's legacy in the arcade: aka, human vs human competition.
It seems that your interests at at odds with what Soul Calibur actually is- that's the thing. If you can't enjoy online because it brings you more competition, then that speak to me that you don't play the game to learn the in's and out's of characters to better use them against a HUMAN opponent. No matter how many variables you throw into CotS, story or whatever, it's still as simple as "find what works, exploit it". No matter how many variables that exist within that mode- as long as it is predicated on fighting an AI, that mode is useless. There is no challenge.
For my part, I trudged through CotS with an Arthur and won with 3 moves: B+K, BB and throws. That is what I remember about that mode- the endless terrible tediousness of it all.
Soul Calibur is not an rpg. I think if those are the things you value in a game; you should play games like that instead of wanting SC to metamorph into that.
