Female
1. Hilde. Both games. Beautifully detailed armor and face in all renders.
2. SC3 Setsuka. All renders. Maybe less in her art render.
3. Pre-SC4 Sophitia. Her renders, in particular. It's less porcelain doll, and her bangs aren't so distracting.

Honorable mentions: SC2 Seong Mi-Na, SE Taki, SC3 Tira

Male
1. Maxi. He looks attractive in every game.
2. SC4 Siegfried. Not so much his face, but his armor. It's so beautifully done.
3. ZWEI. Wonderful tan skin. He wears no underwear. He might have a naughty werewolf side of him.

Honorable mentions: SC4 Yunseong, SC2 Kilik, Pre-SC2 Mitsurugi

Clearly Voldo is the best looking male character in Soulcalibur.

What do you mean by best looking though? you mean the coolest appearance or the most attractive ones? because it's an entire different list each time,
I'd say if you mean the most attractive ones I'd have to go with :

2.Taki
3.Pyrrha
4.Ivy

and while I don't really find any male characters to be attractive, I think naturally Siegfried, Kilik and Patroklos would probably be the most attractive males because they were desgined to look appealing, they are the main protagonists afterall.
as for the coolest looking characters I'd say :
1.Nightmare (except for IV)
2.Astaroth (his SC1's primary)
3.Taki
4.Siegfried
5.Z.W.E.I
Cervantes and Zasalamel look pretty cool too, I guess.

Male:
Only Rock.

Rock looks perfect to me except for his scar on the forhead.

Taki (Sexy Kunoichi)
Ivy (Gorgeous dominatrix)
Sophitia (Beautiful Greek goddess)

Male:
Siegfried (Badass Knight armor)
Mitsurugi (Badass samurai)
Nightmare (Awesome armor and cool sword)

To be honest if there is something that I would miss from V is Xianghua's kids and Taki's student. I think they with Maxi made a great team and felt that they could've given Maxi a bit more character depth. Plus, they weren't annoying as the other newcomers.

1. Voldo : Crazy looks , I love the venetian vibe.
2. Yoshimitsu : same, but with a theatrical kabuki style.

3. Astaroth : just for the strange second design in SC2 ..

Females :

1. Cassandra : The best personality and the perfect balance between cuteness and sexiness. Great outfit and of course .. dat bouncy butt

2. Ivy : S&M vibe that works really well.

3. Tira : The "Harley Quinn" style and the red eyes.

Siegfried gets the greatest mention of all, because in Soul Blade he looked like a shitty little brat. But then came SCI, and just seeing his character portrait on the character Select seemed like a fantasy. Definitely the most improved default in the series.

Honourable mention: Natsu, because I’m a big fan of the whole gyaru style.

Yeah, Natsu was very well designed. Honestly I think she is a good character but her only problem is she is not Taki.

If she had her own unique style it would be better.
